Nordic-spiced Porridge

Try making a large batch and storing it in a kilner jar. In the morning, simply add a handful of porridge mix and some milk to the saucepan.  

Nordic Porridge

MAKES 14 PORTIONS  

  • 150ml milk  
  • 500g porridge oats  
  • 50g walnuts  
  • 50g red or black quinoa  
  • 50g raisins  
  • 1 tbsp ground cinnamon  
  • 1 tsp ground cardamom  
  • 1 tsp ground ginger  
  • 1 pinch of sea salt  

TO SERVE

  • Grated apple 
  • Blueberries 
  • Maple syrup 
  1. Combine all the ingredients and store in a large sealable jar. 
  2. To make a portion of Scandinavian-style porridge, place 75g of the spiced porridge mixture in a small saucepan and stir in 150ml of milk. Place over a gentle heat.   
  3. After 3–4 mins of cooking and when the oats start to thicken, add in some shaved apple, blueberries and finish with maple syrup and a dollop of natural yogurt.
