Try making a large batch and storing it in a kilner jar. In the morning, simply add a handful of porridge mix and some milk to the saucepan.

- 150ml milk
- 500g porridge oats
- 50g walnuts
- 50g red or black quinoa
- 50g raisins
- 1 tbsp ground cinnamon
- 1 tsp ground cardamom
- 1 tsp ground ginger
- 1 pinch of sea salt
TO SERVE
- Grated apple
- Blueberries
- Maple syrup
- Combine all the ingredients and store in a large sealable jar.
- To make a portion of Scandinavian-style porridge, place 75g of the spiced porridge mixture in a small saucepan and stir in 150ml of milk. Place over a gentle heat.
- After 3–4 mins of cooking and when the oats start to thicken, add in some shaved apple, blueberries and finish with maple syrup and a dollop of natural yogurt.
