From editor to reader: A healthy way to kick-start your day…
- Zest of 1 orange
- 500g oats
- 100g mixed seeds
- 100g mixed nuts, roughly chopped
- 2 tsp ground cinnamon
- 2 tsp mixed spice
- 1 tsp ground ginger
- 100ml rapeseed oil
- 6 tbsp runny honey
- 75g dried cranberries
- Using a fine grater, zest the orange into a dish and allow to completely dry for at least 12 hours or leave out overnight. The following day, combine all the dry ingredients, with the exception of the cranberries, in a large bowl.
- Add the oil and syrup to the bowl, stirring through to fully coat the oats. Once the ingredients are combined, spoon onto lined baking trays, pressing out to a layer no thicker than 2cm.
- Bake at 170C/gas 3 for 30 mins. After 15 mins of cooking, remove the granola from the oven and turn using a fork to allow for an even bake – remove from the oven when the oats are golden.
- Allow the oats to completely cool before adding the cranberries and orange zest. Decant into a large sterilised jar and keep for up to 4 weeks.
