2 apples, grated
150g oats
A pinch of cinnamon
2 tsp brown sugar
400ml almond milk, plus extra to finish
2 tsp lemon juice
OPTIONAL ADDITIONS
Dried fruit – sultanas, raisins, chopped figs, apricots, cranberries or dehydrated raspberries and strawberries
Seeds – chia, flax, sunflower or pumpkin
Nuts – flaked almonds, chopped hazelnuts, cashews, pecans or Brazils
1 tbsp cacao powder

- Mix the apple, oats, cinnamon, sugar, milk and lemon juice in a bowl. You might like to mix in as much or as little as any of the suggested optional additions.
- Cover the bowl, transfer it to the fridge and leave overnight.
- In the morning, give the mixture a quick mix and add a little extra milk if it seems a little too thick. Divide it among 2 serving bowls. Serve it as is, or with a topping of your choice.
