Easily adapt the quantities of this recipe to suit your family size.
SERVES 2
- 2 pork chops, on the bone
- 1 red onion, sliced
- Salt and pepper
- 1 tbsp rapeseed oil
- 3 tbsp runny honey
- 3 tbsp whole mustard
- 1 tbsp minced garlic
- 50ml fresh apple juice
- 2 medium apples, sliced into thin wedges
- Mix together the honey, mustard and garlic, and rub the mixture all over the seasoned pork using your fingertips.
- Cook the pork in a preheated oiled pan for roughly 2 mins on each side, until slightly golden.
- Add the apple juice and sliced apples, and cook for another 10 mins or until the apples are tender and the pork is cooked through.
- Garnish with fresh thyme and serve.
